Hi all!
How was your weekend? Mine was great – jam packed and filled with friends, music, food, and love. I have so much to share and today, I want to tell you about Friday night!
Friday was Nidhi’s {also known as Nidhizzle} 26th birthday celebration. I’ve known her for awhile now and one thing that sticks out is that how much she prefers savory dishes over sweet. One time, when we went to an ice cream place,she didn’t even order ice cream. I know, shocker.
So, I knew her birthday was coming up and I wanted her to still blow out candles even though she doesn’t like sweet dishes. I’ve had the idea of a hummus cake in my head for awhile and it was just a matter of figuring out how to pull it off. After some quick Google searching, I was inspired by this post about hummus and avocado cakes from Brittany and decided to go from there.

The ingredients were simple {and very customizable}:
- rice cakes
- baby tomatoes {for decorating}
- Gourmet Garden Parsley {for writing on the cakes! I see these tubes everywhere and decided to take a chance and hope they would write… success!}
- hummus
- guacamole




Step 1: Spread guac evenly over a rice cake

Step 2: Put another rice cake on top and cover it in hummus.
Step 3: Using the Gourmet Garden Parsley, write something. {N = Nidhi}

Repeat over and over! Really, you can take this to a whole different level if you want.


On a few of them, I decorated with baby tomatoes and snap peas that were already in my refrigerator. You can also add some cayenne pepper for “sprinkles,” the options are endless! The hummus cupcakes took under 20 minutes and are perfect for appetizers or “dessert” for your savory-loving friends.

Also, since I didn’t post yesterday, I wanted to say how much I appreciate anyone and everyone who served or is currently serving in the military. People close to me include my maternal grandfather, Edwin, who served in the Navy, my paternal grandfather, Larry, who served in the Army, my brother-in-law, Nate, who served in the Navy, my fantastic boyfriend, Todd, who is currently serving in the Coast Guard and his brother, Steve and his girlfriend Vanessa who both served in the Navy. I am certain I’m missing many people who have directly touched my life, but I want you to know how much it means to me.
