Hi all!
This weekend was exactly what I needed. It included time with friends, brunch, working on my business, and preparing for some work stuff this coming week. I can’t go into detail, but this week is going to be quite intense for me. I have a lot going on both professionally, personally, and with Stella & Dot. As intense as this week is going to be, I’m ready for it and it’s all good stuff! Bring it on, world
I’m stoked.
On Friday, I met up with Lindsay and her family to go to the Blondes vs. Brunettes happy hour at Around the Corner. For only $20, we got all-we-can-eat and drink! It was really fun and we ended up staying a lot later than anticipated (definitely a sign of a good party!).

On Saturday, I made soup. Sarah had some friends over for a soup potluck and I was determined to make something both easy and healthy. I wanted to easily repeat it in the future for healthy lunches throughout the week. My soup was a success! I roughly followed this recipe for Chicken No-Noodle Soup. I basically just used her recipe for the ingredients. I used two rotisserie chickens from the grocery plus the other listed ingredients. I put them all into a boiling pot of chicken stock (she used veggie), cooked for about 10 minutes, and then transferred it to a crock pot. It cooked for about an hour and a half and was ready to go!
The only thing I forgot to pick up at the store was an onion so this soup went sans onion. Also, it tasted a little salty, so I cut the salt down by adding some lemon. All things considered, it turned out pretty well and I have lunches all week!

At Sarah’s house, we had my soup, her soup (parsnip apple) and a minetrone soup. All of it was fantastic! Sarah also made No Knead Bread. YUM!

Cake balls for dessert! I really LOVE Sarah’s desserts and these were no exception.

On Sunday, I enjoyed some black coffee with whipped cream (a weekend favorite!). Then, I did some work and ended up at The Limited to use some virtual dollars I had. I needed dress pants so bad so I bought two pairs for very cheap. In addition to my coupons, they had a buy one get one half off sale and I had to take advantage.

I’m with Jen: I too love the soup party idea. I’m jealous of that chicken soup. I’ve been fighting off a cold since the end of December. Might have to make a pot for myself this week.
